Ingredients
  • 500 gram Sweet Potatoes
  • 4 teaspoon Peanut Butter
  • 1 piece Onion
  • 2 clove Garlic
  • 4 cup Vegetable Stock
  • 1 cup Coconut Milk
  • 2 tablespoon Lime Juice
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Ground Coriander
  • 1 teaspoon Salt
  • 0.5 teaspoon Black Pepper
  • 2 tablespoon Fresh Cilantro
Instructions
  1. Peel and chop the sweet potatoes.
  2. In a large pot, sauté the onion and garlic until translucent.
  3. Add the sweet potatoes, vegetable stock, peanut butter, ground cumin, ground coriander, salt, and black pepper to the pot.
  4. Bring to a boil and then reduce heat and simmer for 20 minutes, or until the sweet potatoes are tender.
  5. Use an immersion blender or transfer the soup to a blender to puree until smooth.
  6. Return the soup to the pot and stir in the coconut milk and lime juice.
  7. Simmer for an additional 5 minutes.
  8. Serve hot, garnished with fresh cilantro.
