Ingredients
  • 500 gram Sweet potatoes
  • 2 teaspoon Ginger
  • 1 cup Onion
  • 2 clove Garlic
  • 4 cup Vegetable broth
  • 1 cup Coconut milk
  • 2 tablespoon Lime juice
  • 1 teaspoon Sriracha sauce
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Cilantro
Instructions
  1. Peel and chop the sweet potatoes.
  2. In a large pot, sauté the chopped onion, ginger, and garlic until fragrant.
  3. Add the sweet potatoes and vegetable broth to the pot. Bring to a boil and simmer until the sweet potatoes are tender.
  4. Use an immersion blender to puree the soup until smooth.
  5. Stir in the coconut milk, lime juice, sriracha sauce, salt, and black pepper.
  6. Simmer for a few more minutes to allow the flavors to meld.
  7. Serve hot, garnished with cilantro.
