Ingredients
  • 500 gram Sweet Potatoes
  • 400 gram Chickpeas
  • 400 ml Coconut Milk
  • 1 medium Onion
  • 3 clove Garlic
  • 1 teaspoon Ginger
  • 2 teaspoon Curry Powder
  • 1 teaspoon Turmeric Powder
  • 1 teaspoon Cumin Powder
  • 1 teaspoon Coriander Powder
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 2 tablespoon Lime Juice
  • 2 tablespoon Fresh Coriander
Instructions
  1. Heat oil in a large pan and sauté onion, garlic, and ginger until fragrant.
  2. Add curry powder, turmeric powder, cumin powder, coriander powder, salt, and black pepper. Stir well.
  3. Add sweet potatoes and chickpeas. Cook for 5 minutes.
  4. Pour in coconut milk and simmer for 20 minutes or until sweet potatoes are tender.
  5. Stir in lime juice and fresh coriander.
  6. Serve hot with rice or naan bread.
