Ingredients
  • 2 cup Sweet peas
  • 1 medium Onion
  • 2 clove Garlic
  • 4 cup Vegetable broth
  • 1 cup Coconut milk
  • 1 tablespoon Lemon juice
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • to taste for garnish Fresh mint leaves
Instructions
  1. Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic, and sauté until onion is translucent.
  2. Add sweet peas and vegetable broth. Bring to a boil, then reduce heat and simmer for 10 minutes.
  3. Remove from heat and let cool slightly.
  4. Using a blender or immersion blender, puree the soup until smooth.
  5. Return the soup to the pot and stir in coconut milk, lemon juice, salt, and black pepper.
  6. Heat the soup over low heat until warmed through.
  7. Serve hot, garnished with fresh mint leaves.
