Ingredients
  • 1 head Cauliflower
  • 2 tablespoon Coconut oil
  • 1 medium Onion
  • 2 clove Garlic
  • 1 teaspoon Ginger
  • 1 teaspoon Turmeric powder
  • 1 teaspoon Cumin powder
  • 1 teaspoon Coriander powder
  • 1 teaspoon Salt
  • 1 cup Coconut milk
  • 2 tablespoon Lime juice
  • 2 tablespoon Fresh cilantro
  • 2 tablespoon Shredded coconut
Instructions
  1. Grate the cauliflower head to make cauliflower rice.
  2. Heat coconut oil in a pan and sauté onion, garlic, and ginger until fragrant.
  3. Add turmeric powder, cumin powder, coriander powder, and salt. Stir well.
  4. Add cauliflower rice and cook for 5 minutes, stirring occasionally.
  5. Pour in coconut milk and cook for another 10 minutes, or until the cauliflower rice is tender.
  6. Stir in lime juice and fresh cilantro.
  7. Serve the sweet coconut cauliflower rice garnished with shredded coconut.
