Ingredients
  • 1 head Cauliflower
  • 1 ripe Mango
  • 1 medium Red bell pepper
  • 1/2 cup Sweet chili sauce
  • 2 tablespoon Soy sauce
  • 1/2 teaspoon Garlic powder
  • 1 tablespoon Cornstarch
  • 1/4 cup Water
  • 2 sliced Green onions
  • 1 tablespoon Sesame seeds
  • 1/4 cup chopped Cilantro
Instructions
  1. Preheat the oven to 425°F (220°C).
  2. Cut the cauliflower into florets and place them on a baking sheet.
  3. In a small bowl, mix together the sweet chili sauce, soy sauce, garlic powder, cornstarch, and water.
  4. Pour the sauce over the cauliflower and toss to coat.
  5. Bake in the preheated oven for 20-25 minutes, or until the cauliflower is tender and slightly crispy.
  6. While the cauliflower is baking, peel and dice the mango and dice the red bell pepper.
  7. Once the cauliflower is done, remove it from the oven and let it rest for 5 minutes.
  8. In a large bowl, combine the baked cauliflower, mango, red bell pepper, green onions, sesame seeds, and cilantro.
  9. Toss everything together until well mixed.
  10. Serve the sweet chili mango cauliflower as a side dish or appetizer.
