Ingredients
  • 500 gram Carrots
  • 1 piece Onion
  • 1 piece Bell pepper
  • 1 cup Pineapple chunks
  • 4 tablespoon Tomato ketchup
  • 2 tablespoon Rice vinegar
  • 2 tablespoon Sugar
  • 2 tablespoon Soy sauce
  • 1 tablespoon Cornstarch
  • 1 cup Water
  • 2 tablespoon Vegetable oil
  • 1 teaspoon Salt
Instructions
  1. Peel and slice the carrots into thin rounds.
  2. Chop the onion and bell pepper into small pieces.
  3. In a bowl, mix together tomato ketchup, rice vinegar, sugar, soy sauce, cornstarch, and water to make the sweet and sour sauce.
  4. Heat vegetable oil in a pan and add the carrots, onion, and bell pepper. Stir-fry for 5 minutes.
  5. Add the sweet and sour sauce to the pan and cook for another 5 minutes until the sauce thickens.
  6. Add pineapple chunks and cook for 2 more minutes.
  7. Season with salt to taste.
  8. Serve hot as a side dish.
