Ingredients
  • 2 cup Frozen Peas
  • 2 cup Vegetable Stock
  • 2 tablespoon Fresh Mint Leaves
  • 1 medium Onion
  • 2 clove Garlic Cloves
  • 2 teaspoon Lemon Juice
  • 1 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
Instructions
  1. Heat olive oil in a large saucepan over medium heat. Add chopped onion and minced garlic cloves. Cook until softened, about 5 minutes.
  2. Add vegetable stock and frozen peas to the saucepan. Bring to a simmer and cook for 5 minutes.
  3. Remove from heat and add fresh mint leaves, lemon juice, salt, and black pepper.
  4. Use an immersion blender or a regular blender to puree the soup until smooth.
  5. Return the soup to the saucepan and heat over low heat until warmed through.
  6. Serve hot and garnish with additional mint leaves if desired.
