Ingredients
  • 500 gram Beets
  • 1 cup Apple cider vinegar
  • 2 tablespoon Sugar
  • 1 teaspoon Salt
  • 1 small Red onion
  • 2 tablespoon Fresh dill
  • 1 tablespoon Extra virgin olive oil
Instructions
  1. Wash and peel the beets. Slice them into thin rounds.
  2. In a bowl, combine apple cider vinegar, sugar, and salt. Stir until the sugar and salt dissolve.
  3. Add the sliced beets to the bowl and toss to coat them in the vinegar mixture. Let them marinate for 30 minutes.
  4. Meanwhile, thinly slice the red onion and chop the fresh dill.
  5. After 30 minutes, drain the pickling liquid from the beets.
  6. In a serving bowl, combine the pickled beets, sliced red onion, and chopped dill.
  7. Drizzle with extra virgin olive oil and toss to combine.
