Ingredients
  • 500 gram Sweet Potatoes
  • 1 cup Red Onion
  • 1 cup Fresh Parsley
  • 2 tablespoon Lemon Juice
  • 2 tablespoon Olive Oil
  • 1 tablespoon Honey
  • 1 tablespoon Dijon Mustard
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
Instructions
  1. Preheat the oven to 400°F (200°C).
  2. Wash and peel the sweet potatoes, then cut them into cubes.
  3. Place the sweet potato cubes on a baking sheet and drizzle with olive oil. Season with salt and black pepper.
  4. Roast in the preheated oven for 25-30 minutes, or until the sweet potatoes are tender and slightly caramelized.
  5. While the sweet potatoes are roasting, prepare the dressing. In a small bowl, whisk together lemon juice, olive oil, honey, Dijon mustard, salt, and black pepper.
  6. Finely chop the red onion and fresh parsley.
  7. In a large mixing bowl, combine the roasted sweet potatoes, red onion, and fresh parsley.
  8. Pour the dressing over the salad and toss gently to coat.
  9. Serve the sunny sweet potato salad immediately or refrigerate for later. Enjoy!
