  • 1 cup Quinoa
  • 1 cup Cherry Tomatoes
  • 1 cup Cucumber
  • 1 cup Red Bell Pepper
  • 1 cup Yellow Bell Pepper
  • 1 cup Red Onion
  • 0.5 cup Fresh Parsley
  • 0.5 cup Fresh Mint
  • 2 tablespoon Lemon Juice
  • 2 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black Pepper
Instructions
  1. Cook quinoa according to package instructions.
  2. In a large bowl, combine cooked quinoa, cherry tomatoes, cucumber, red bell pepper, yellow bell pepper, red onion, fresh parsley, and fresh mint.
  3. In a small bowl, whisk together lemon juice, olive oil, salt, and black pepper.
  4. Pour the dressing over the salad and toss to combine.
  5. Serve chilled and enjoy!
