Ingredients
  • 1 cup Red rice
  • 2 medium Summer squash
  • 1 cup Cherry tomatoes
  • 1 small Red onion
  • 3 tablespoon Fresh dill
  • 1 medium Lemon
  • 2 tablespoon Extra virgin olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
Instructions
  1. Cook the red rice according to package instructions. Drain and let it cool.
  2. Meanwhile, slice the summer squash and halve the cherry tomatoes. Thinly slice the red onion.
  3. In a large bowl, combine the cooked red rice, summer squash, cherry tomatoes, red onion, and fresh dill.
  4. Squeeze the juice of one lemon over the salad and drizzle with extra virgin olive oil.
  5. Season with salt and black pepper, then toss everything together until well combined.
  6. Let the salad rest for 10 minutes to allow the flavors to meld together.
