Ingredients
  • 2 cup Corn kernels
  • 1 cup Cherry tomatoes
  • 1 cup Cucumber
  • 1 small Red onion
  • 2 tablespoon Fresh cilantro
  • 2 tablespoon Lime juice
  • 1 tablespoon Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
Instructions
  1. Boil the corn kernels for 3-4 minutes until tender. Drain and let cool.
  2. In a large bowl, combine the cooked corn kernels, cherry tomatoes (halved), cucumber (diced), red onion (thinly sliced), and fresh cilantro.
  3. In a small bowl, whisk together lime juice, olive oil, salt, and black pepper.
  4. Pour the dressing over the salad ingredients and toss gently to combine.
