Ingredients
  • 2 cup Fresh corn kernels
  • 1 cup Cherry tomatoes, halved
  • 1 cup Cucumber, diced
  • 1/4 cup Red onion, thinly sliced
  • 1/4 cup Fresh cilantro, chopped
  • 2 tablespoon Lime juice
  • 1 tablespoon Olive oil
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
Instructions
  1. Bring a pot of water to boil and cook the corn kernels for 3-4 minutes until tender. Drain and let cool.
  2. In a large bowl, combine the cooked corn kernels, cherry tomatoes, cucumber, red onion, and cilantro.
  3. In a small bowl, whisk together lime juice, olive oil, salt, and black pepper.
  4. Pour the dressing over the salad and toss to combine.
  5. Serve the summer corn salad chilled and enjoy!
