Ingredients
  • 500 gram Tomatoes
  • 300 gram Cucumbers
  • 200 gram Bell peppers
  • 100 gram Red onion
  • 20 gram Fresh basil leaves
  • 2 teaspoon Extra virgin olive oil
  • 2 teaspoon Lemon juice
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 cup Water
Instructions
  1. Wash and chop all the vegetables.
  2. In a large pot, heat the olive oil over medium heat.
  3. Add the chopped red onion and sauté until translucent.
  4. Add the bell peppers and cook for 5 minutes.
  5. Add the tomatoes, cucumbers, and water to the pot.
  6. Season with salt and black pepper.
  7. Bring the soup to a boil, then reduce the heat and let it simmer for 20 minutes.
  8. Remove the pot from the heat and let the soup cool for 5 minutes.
  9. Using an immersion blender, blend the soup until smooth.
  10. Stir in the lemon juice.
  11. Serve the soup chilled, garnished with fresh basil leaves.
