  • 1 cup Polenta
  • 1 cup Almond flour
  • 1 teaspoon Baking powder
  • 0.25 teaspoon Salt
  • 2 teaspoon Orange zest
  • 0.5 cup Orange juice
  • 0.25 cup Coconut oil
  • 0.25 cup Maple syrup
  • 1 teaspoon Vanilla extract
  • 0.5 cup Almond milk
Instructions
  1. Preheat the oven to 350°F (175°C). Grease a muffin tin.
  2. In a large bowl, combine the polenta, almond flour, baking powder, salt, and orange zest.
  3. In a separate bowl, whisk together the orange juice, coconut oil, maple syrup, vanilla extract, and almond milk.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.
  6. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the muffins to cool in the tin for 10 minutes, then transfer to a wire rack to cool completely.
