Instructions
  1. Heat olive oil in a skillet over medium heat.
  2. Add onion and garlic, sauté until fragrant.
  3. Add red bell pepper, corn, and lima beans. Cook for 5 minutes.
  4. Season with salt, black pepper, and fresh thyme.
  5. Cook for another 5 minutes until vegetables are tender.
  6. Remove from heat and let it rest for 5 minutes.
