Ingredients
  • 8 ounce Rice noodles
  • 2 medium-sized Beets
  • 1 cup Beet greens
  • 2 clove Garlic
  • 1 teaspoon Ginger
  • 2 tablespoon Soy sauce
  • 1 tablespoon Sesame oil
  • 2 tablespoon Vegetable oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 sliced Green onions
Instructions
  1. Cook the rice noodles according to the package instructions. Drain and set aside.
  2. Peel and grate the beets. Separate the beet greens from the stems and chop them.
  3. Heat vegetable oil in a large pan or wok over medium-high heat. Add garlic and ginger, and sauté for 1 minute.
  4. Add grated beets and beet greens to the pan. Stir-fry for 3-4 minutes until the beets are slightly softened.
  5. Add cooked rice noodles to the pan and stir-fry for another 2 minutes.
  6. Season with soy sauce, sesame oil, salt, and black pepper. Stir well to combine.
  7. Remove from heat and let it rest for 5 minutes.
  8. Garnish with sliced green onions and serve hot.
