  • 8 ounce Firm tofu
  • 1 cup Zucchini
  • 1 cup Bell pepper
  • 1 cup Cherry tomatoes
  • 1 cup Mushrooms
  • 1 cup Red onion
  • 2 tablespoon Olive oil
  • 2 tablespoon Soy sauce
  • 1 teaspoon Garlic powder
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Salt
  • 8 piece Wooden skewers
Instructions
  1. Preheat the grill or oven to medium-high heat.
  2. Cut the tofu, zucchini, bell pepper, cherry tomatoes, mushrooms, and red onion into bite-sized pieces.
  3. In a bowl, whisk together olive oil, soy sauce, garlic powder, smoked paprika, and salt.
  4. Thread the tofu and vegetables onto the wooden skewers, alternating between ingredients.
  5. Brush the skewers with the marinade mixture.
  6. Grill or bake the skewers for about 10 minutes, turning occasionally, until the vegetables are tender and slightly charred.
  7. Remove from heat and let them rest for 5 minutes.
