Ingredients
  • 2 medium-sized Zucchini
  • 1 cup Rice
  • 1 medium-sized Onion
  • 2 clove Garlic
  • 2 cup Vegetable broth
  • 2 tablespoon Tomato paste
  • 2 tablespoon Olive oil
  • 1 teaspoon Paprika
  • 1 teaspoon Cumin
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Fresh parsley
Instructions
  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and minced garlic, and sauté until golden brown.
  3. Add sliced zucchini and cook for 5 minutes, stirring occasionally.
  4. Add rice, vegetable broth, tomato paste, paprika, cumin, salt, and black pepper.
  5. Bring to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes until rice is cooked and liquid is absorbed.
  6. Remove from heat and let it rest for 5 minutes.
  7. Garnish with fresh parsley and serve hot.
