Ingredients
  • 500 gram Beets
  • 200 gram Beet Greens
  • 2 teaspoon Olive Oil
  • 0.25 cup Tahini
  • 2 clove Garlic
  • 2 teaspoon Lemon Juice
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black Pepper
  • 1 teaspoon Sesame Seeds
Instructions
  1. Preheat the oven to 400°F (200°C).
  2. Trim the beet greens from the beets, then wash and dry them thoroughly.
  3. Peel the beets and cut them into wedges.
  4. Toss the beet wedges with 1 teaspoon olive oil, salt, and black pepper.
  5. Place the beet wedges on a baking sheet and roast in the preheated oven for 35-40 minutes, or until tender.
  6. Meanwhile, heat 1 teaspoon olive oil in a skillet over medium heat.
  7. Add the beet greens and sauté until wilted, about 5 minutes.
  8. In a small bowl, whisk together tahini, garlic, lemon juice, and salt.
  9. Once the beets are roasted, remove them from the oven and let them cool.
  10. Serve the roasted beets and sautéed beet greens drizzled with tahini sauce and sprinkled with sesame seeds.
