Ingredients
  • 2 cup Butternut squash
  • 2 cup Acorn squash
  • 1 cup Zucchini
  • 1 cup Yellow squash
  • 1 medium Red onion
  • 2 tablespoon Olive oil
  • 2 clove Garlic
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Fresh thyme
Instructions
  1. Preheat the oven to 400°F (200°C).
  2. Peel and dice the butternut squash and acorn squash.
  3. Slice the zucchini and yellow squash.
  4. Chop the red onion and mince the garlic.
  5. In a large bowl, toss the squash, zucchini, yellow squash, red onion, garlic, olive oil, salt, black pepper, and fresh thyme.
  6. Spread the mixture on a baking sheet and roast in the preheated oven for 20-25 minutes, or until the squash is tender and slightly caramelized.
  7. Remove from the oven and let it rest for 5 minutes before serving.
  8. Serve hot and enjoy!
