Ingredients
  • 500 gram Butternut squash
  • 2 piece Apple
  • 1 piece Onion
  • 2 clove Garlic
  • 4 cup Vegetable broth
  • 1 cup Coconut milk
  • 2 tablespoon Olive oil
  • 1 teaspoon Cinnamon
  • 1 teaspoon Nutmeg
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
Instructions
  1. Peel and chop the butternut squash, apples, onion, and garlic.
  2. Heat olive oil in a large pot over medium heat.
  3. Add the chopped onion and garlic, and sauté until fragrant.
  4. Add the butternut squash and apples, and cook for a few minutes.
  5. Add vegetable broth, cinnamon, nutmeg, salt, and black pepper.
  6. Bring to a boil, then reduce heat and simmer for about 20 minutes, or until the squash is tender.
  7. Use an immersion blender or transfer the soup to a blender to puree until smooth.
  8. Stir in coconut milk and let the soup simmer for another 5 minutes.
  9. Season with additional salt and pepper to taste.
  10. Serve hot and enjoy!
