Preheat the oven to 400°F (200°C).

Grate the zucchini and squeeze out the excess moisture.

In a food processor, combine the grated zucchini, red onion, garlic cloves, and cooked chickpeas. Pulse until well mixed.

Add rolled oats, ground flaxseed, fresh parsley, cumin powder, smoked paprika, salt, and black pepper. Pulse until the mixture comes together.

Shape the mixture into patties and place them on a baking sheet lined with parchment paper.

Brush the patties with olive oil and bake for 15 minutes, flipping halfway through.

Remove from the oven and let the patties rest for 10 minutes.

Serve the sprouted grain zucchini burgers on sprouted grain buns with your favorite toppings.
