  • 2 cup Cabbage
  • 2 medium Carrots
  • 1 cup Radishes
  • 1 cup Red bell pepper
  • 4 stalks Green onions
  • 0.5 cup Fresh parsley
  • 2 tablespoon Fresh dill
  • 2 tablespoon Lemon juice
  • 2 tablespoon Olive oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
Instructions
  1. Shred the cabbage and carrots into thin strips.
  2. Slice the radishes, red bell pepper, and green onions.
  3. Chop the fresh parsley and dill.
  4. In a large mixing bowl, combine the shredded cabbage, carrots, radishes, red bell pepper, green onions, parsley, and dill.
  5. In a small bowl, whisk together the lemon juice, olive oil, salt, and black pepper.
  6. Pour the dressing over the vegetables and toss to coat.
  7. Let the coleslaw rest in the refrigerator for at least 30 minutes before serving.
