Ingredients
  • 2 tablespoon Olive Oil
  • 1 medium Onion
  • 3 clove Garlic
  • 2 medium Carrots
  • 2 medium Zucchini
  • 1 medium Bell Pepper
  • 1 cup Green Beans
  • 1 cup Peas
  • 2 cup Vegetable Broth
  • 2 medium Tomatoes
  • 2 tablespoon Fresh Herbs (such as parsley, thyme, basil)
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1 tablespoon Lemon Juice
Instructions
  1. Heat olive oil in a large pot over medium heat. Add the onion and garlic, and sauté until softened.
  2. Add the carrots, zucchini, bell pepper, green beans, and peas. Stir well.
  3. Pour in the vegetable broth and add the tomatoes. Bring to a simmer and cook for 15 minutes.
  4. Stir in the fresh herbs, salt, black pepper, and lemon juice.
  5. Remove from heat and let it rest for 5 minutes.
  6. Serve the spring vegetable ragout hot with your choice of bread or rice.
