In a small bowl, combine soy sauce, sesame oil, cornstarch, and water. Set aside.

Heat vegetable oil in a wok or large skillet over medium-high heat.

Add garlic and ginger, and stir-fry for 1 minute.

Add bamboo shoots, spring cabbage, carrot, snow peas, mushrooms, tofu, bean sprouts, water chestnuts, and wood ear mushrooms. Stir-fry for 3-4 minutes.

Pour the sauce mixture over the vegetables and stir-fry for an additional 2 minutes, until the sauce thickens.

Season with salt and black pepper.

Remove from heat and let it rest for 5 minutes.
