Ingredients
  • 500 gram Asparagus
  • 1 piece Onion
  • 2 clove Garlic
  • 4 cup Vegetable broth
  • 2 tablespoon Olive oil
  • 1 tablespoon Lemon juice
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoon Fresh parsley
Instructions
  1. Trim the asparagus and cut into small pieces.
  2. In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until translucent.
  3. Add asparagus and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for 15 minutes or until asparagus is tender.
  4. Use an immersion blender or transfer the soup to a blender to puree until smooth.
  5. Stir in lemon juice, salt, and black pepper.
  6. Serve hot, garnished with fresh parsley.
