Ingredients
  • 1 cup Farro
  • 2 cup Arugula
  • 1 cup Cherry Tomatoes
  • 1 cup Cucumber
  • 1 small Red Onion
  • 0.5 cup Kalamata Olives
  • 0.5 cup Feta Cheese
  • 2 tablespoon Extra Virgin Olive Oil
  • 1 tablespoon Lemon Juice
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black Pepper
Instructions
  1. Cook the farro according to package instructions. Drain and let it cool.
  2. In a large bowl, combine arugula, cherry tomatoes, cucumber, red onion, kalamata olives, and feta cheese.
