Ingredients
  • 2 cup Split peas
  • 6 cup Vegetable broth
  • 2 medium Carrots
  • 2 medium Celery stalks
  • 1 medium Onion
  • 2 clove Garlic cloves
  • 2 leaf Bay leaves
  • 1 teaspoon Thyme
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Olive oil
  • 2 cup Water
Instructions
  1. Rinse the split peas under cold water.
  2. In a large pot, heat olive oil over medium heat.
  3. Add chopped onions, celery, carrots, and minced garlic. Cook until vegetables are tender.
  4. Add split peas, vegetable broth, water, bay leaves, thyme, salt, and black pepper.
  5. Bring to a boil, then reduce heat and simmer for 1 hour or until split peas are soft.
  6. Remove bay leaves and blend the soup until smooth using an immersion blender or regular blender.
  7. Serve hot and enjoy!
