  • 2 cup Split Peas
  • 1 medium Onion
  • 2 medium Carrots
  • 2 stalk Celery Stalks
  • 2 clove Garlic Cloves
  • 4 cup Vegetable Broth
  • 2 leaf Bay Leaves
  • 1 teaspoon Thyme
  • 1 teaspoon Rosemary
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 2 tablespoon Olive Oil
  • 4 tablespoon Parmesan Cheese
Instructions
  1. Rinse the split peas and set aside.
  2. In a large pot, heat olive oil over medium heat. Add onion, carrots, celery, and garlic. Cook until vegetables are tender, about 5 minutes.
  3. Add split peas, vegetable broth, bay leaves, thyme, rosemary, salt, and black pepper to the pot. Bring to a boil, then reduce heat and simmer for 1 hour or until split peas are soft.
  4. Remove bay leaves and blend the soup until smooth using an immersion blender or regular blender.
  5. Serve hot, garnished with grated Parmesan cheese. Enjoy!
