Ingredients
  • 2 cup Split peas
  • 1 medium Onion
  • 2 medium Carrots
  • 2 stalk Celery stalks
  • 2 clove Garlic cloves
  • 4 cup Vegetable broth
  • 2 leaf Bay leaves
  • 1 teaspoon Thyme
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Olive oil
Instructions
  1. Rinse the split peas and set aside.
  2. In a large pot, heat olive oil over medium heat. Add onion, carrots, celery, and garlic. Cook until vegetables are tender, about 5 minutes.
  3. Add split peas, vegetable broth, bay leaves, thyme, salt, and black pepper to the pot. Bring to a boil, then reduce heat and simmer for 1 hour or until split peas are soft.
  4. Remove bay leaves and use an immersion blender to blend the soup until smooth. Alternatively, transfer the soup to a blender and blend in batches.
  5. Return the soup to the pot and heat over low heat until warmed through.
  6. Serve hot and enjoy!
