Ingredients
  • 2 cup Split peas
  • 1 medium Onion
  • 2 medium Carrot
  • 2 medium Celery stalks
  • 2 clove Garlic cloves
  • 6 cup Vegetable broth
  • 2 leaf Bay leaves
  • 1 teaspoon Thyme
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoon Olive oil
Instructions
  1. Rinse the split peas and set aside.
  2. Heat olive oil in a large pot over medium heat.
  3. Add onion, carrot, celery, and garlic. Cook until vegetables are softened.
  4. Add split peas, vegetable broth, bay leaves, thyme, salt, and black pepper to the pot.
  5. Bring to a boil, then reduce heat and simmer for 1 hour, or until split peas are tender.
  6. Remove bay leaves and thyme sprigs.
  7. Use an immersion blender to blend the soup until smooth.
  8. Serve hot and enjoy!
