Spinach and Broccoli Soup
Spinach and broccoli are both considered superfoods, packed with essential nutrients and antioxidants.

Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic. Sauté until onion becomes translucent.

Add chopped broccoli and spinach to the pot. Stir and cook for 2-3 minutes.

Pour vegetable broth into the pot. Bring to a boil, then reduce heat and simmer for 10-15 minutes, until the vegetables are tender.

Remove the pot from heat and let it cool slightly. Use an immersion blender or regular blender to puree the soup until smooth.

Return the pot to low heat. Stir in coconut milk, salt, black pepper, and lemon juice. Cook for an additional 5 minutes, stirring occasionally.

Remove from heat and let the soup rest for 5 minutes.

Serve hot and garnish with a drizzle of coconut milk or a sprinkle of black pepper, if desired.
