Ingredients
  • 4 cup Tomatoes
  • 1 medium Onion
  • 2 clove Garlic
  • 1 inch Ginger
  • 1 teaspoon Red chili powder
  • 1/2 teaspoon Turmeric powder
  • 1/2 teaspoon Cumin powder
  • 1/2 teaspoon Coriander powder
  • 1/2 teaspoon Garam masala powder
  • 2 cup Vegetable broth
  • 1/2 cup Coconut milk
  • 1 tablespoon Lemon juice
  • 2 tablespoon Fresh cilantro
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
Instructions
  1. Heat oil in a large pot over medium heat. Add chopped onion, garlic, and ginger. Cook until onion is translucent.
  2. Add tomatoes, red chili powder, turmeric powder, cumin powder, coriander powder, and garam masala powder. Cook for 5 minutes.
  3. Add vegetable broth and bring to a boil. Reduce heat and simmer for 15 minutes.
  4. Use an immersion blender to blend the soup until smooth.
  5. Stir in coconut milk, lemon juice, salt, and black pepper. Simmer for another 5 minutes.
  6. Serve hot, garnished with fresh cilantro.
