Ingredients
  • 500 gram Tomatoes
  • 150 gram Onion
  • 2 clove Garlic
  • 1 piece Red chili pepper
  • 20 gram Coriander leaves
  • 2 cup Vegetable broth
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 tablespoon Lime juice
Instructions
  1. Heat olive oil in a large pot over medium heat. Add chopped onion, minced garlic, and red chili pepper. Cook until the onion is translucent.
  2. Add diced tomatoes and vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes.
  3. Use an immersion blender to puree the soup until smooth. Alternatively, transfer the soup to a blender and blend until smooth.
  4. Season with salt, black pepper, and lime juice. Stir in chopped coriander leaves.
  5. Allow the soup to rest for 5 minutes before serving.
  6. Serve hot and garnish with additional coriander leaves, if desired.
