Heat olive oil in a large pot over medium heat. Add chopped onion, minced garlic, and diced red bell pepper. Cook until softened, about 5 minutes.

Add paprika, cumin, cayenne pepper, salt, and black pepper. Stir well to coat the vegetables.

Pour in the vegetable broth and bring to a simmer.

Add canned tomatoes (with their juice) and chickpeas. Stir to combine.

Cover the pot and let the stew simmer for 20 minutes, stirring occasionally.

Remove from heat and let it rest for 10 minutes.

Stir in fresh parsley and lemon juice.
