Ingredients
  • 500 gram Carrots
  • 2 teaspoon Olive oil
  • 2 clove Garlic cloves
  • 1 teaspoon Cumin powder
  • 1 teaspoon Paprika
  • 1 teaspoon Red pepper flakes
  • 1 tablespoon Lemon juice
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Fresh cilantro
Instructions
  1. Preheat the oven to 425°F (220°C).
  2. Peel and slice the carrots into 1-inch thick rounds.
  3. In a bowl, toss the carrots with olive oil, garlic cloves, cumin powder, paprika, red pepper flakes, salt, and black pepper.
  4. Spread the seasoned carrots on a baking sheet and roast in the preheated oven for 20-25 minutes, or until tender and slightly caramelized.
  5. Allow the roasted carrots to cool for 5 minutes.
  6. Transfer the roasted carrots to a blender or food processor. Add lemon juice and fresh cilantro.
  7. Blend until smooth and creamy.
  8. Taste and adjust the seasoning if needed.
  9. Transfer the spicy roasted carrot spread to a serving bowl.
  10. Serve with toasted bread or crackers. Enjoy!
