Ingredients
  • 1 cup Rice
  • 1 cup Black-Eyed Peas
  • 1 medium Onion
  • 2 clove Garlic
  • 1 teaspoon Ginger
  • 1 medium Tomato
  • 2 chopped Green Chili
  • 1 teaspoon Turmeric Powder
  • 1 teaspoon Red Chili Powder
  • 1 teaspoon Cumin Powder
  • 1 teaspoon Coriander Powder
  • 1 teaspoon Garam Masala
  • 1 teaspoon Salt
  • 2 cup Water
  • as needed for garnish Cilantro
  • 4 wedge Lemon
Instructions
  1. Rinse the rice and black-eyed peas separately.
  2. In a large pot, heat oil and sauté the onions, garlic, and ginger until golden brown.
  3. Add the tomatoes and green chilies, and cook until the tomatoes are soft.
  4. Add the turmeric powder, red chili powder, cumin powder, coriander powder, garam masala, and salt. Mix well.
  5. Add the black-eyed peas and water. Bring to a boil, then reduce heat and simmer until the peas are tender.
  6. In a separate pot, cook the rice according to package instructions.
  7. Once the black-eyed peas are cooked, add the cooked rice to the pot and mix well.
  8. Cover and let it rest for 5 minutes.
  9. Garnish with cilantro and serve with lemon wedges.
