Ingredients
  • 2 pound Red Potatoes
  • 2 medium Red Bell Peppers
  • 2 tablespoon Olive Oil
  • 1 teaspoon Paprika
  • 1/2 teaspoon Cayenne Pepper
  • 1/2 teaspoon Garlic Powder
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black Pepper
  • 2 tablespoon Fresh Parsley
Instructions
  1. Preheat the oven to 425°F (220°C).
  2. Cut the red potatoes into bite-sized cubes.
  3. Slice the red bell peppers into strips.
  4. In a large bowl, combine the potatoes, bell peppers, olive oil, paprika, cayenne pepper, garlic powder, salt, and black pepper. Toss until the potatoes and peppers are well coated.
  5. Spread the potato mixture on a baking sheet and roast in the preheated oven for 25-30 minutes, or until the potatoes are crispy and golden brown.
  6. Remove from the oven and let rest for 5 minutes.
  7. Garnish with fresh parsley before serving.
