Ingredients
  • 1 cup Lentils
  • 1 bunch Kale
  • 1 medium Onion
  • 2 clove Garlic
  • 1 can Tomatoes
  • 4 cup Vegetable broth
  • 2 tablespoon Olive oil
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Red pepper flakes
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Lemon juice
Instructions
  1. Heat olive oil in a large pot over medium heat. Add onion and garlic, sauté until fragrant.
  2. Add cumin, paprika, and red pepper flakes. Stir for a minute.
  3. Add lentils, tomatoes, and vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes.
  4. Add kale and cook for an additional 5 minutes.
  5. Season with salt, black pepper, and lemon juice.
  6. Serve hot and enjoy!
