Ingredients
  • 2 cup Corn
  • 1 can Black beans
  • 1 medium Red bell pepper
  • 1 small Red onion
  • 2 clove Garlic cloves
  • 1 medium Jalapeno pepper
  • 1 teaspoon Cumin powder
  • 1 teaspoon Chili powder
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
  • 2 tablespoon Lime juice
  • 2 tablespoon Fresh cilantro
  • 1 tablespoon Olive oil
Instructions
  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced red onion, minced garlic, and jalapeno pepper. Saute until onion becomes translucent.
  3. Add sliced red bell pepper and cook for another 2-3 minutes.
  4. Add corn, black beans, cumin powder, chili powder, salt, and black pepper. Stir well to combine.
  5. Reduce heat to low and simmer for 10-15 minutes, stirring occasionally.
  6. Remove from heat and let it rest for 5 minutes.
  7. Stir in lime juice and fresh cilantro.
  8. Serve hot and enjoy!
