Ingredients
  • 1 can Chickpeas
  • 1 cup Mushrooms
  • 1 medium Onion
  • 2 clove Garlic
  • 1 medium Red Bell Pepper
  • 1 medium Carrot
  • 2 tablespoon Ground Flaxseed
  • 1 cup Breadcrumbs
  • 2 tablespoon Nutritional Yeast
  • 1 tablespoon Soy Sauce
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Cumin
  • 1 teaspoon Chili Powder
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 2 tablespoon Fresh Parsley
  • 1 tablespoon Olive Oil
Instructions
  1. Preheat the oven to 375°F (190°C).
  2. Drain and rinse the chickpeas.
  3. In a food processor, combine the chickpeas, mushrooms, onion, garlic, red bell pepper, and carrot. Pulse until coarsely chopped.
  4. In a large bowl, mix the ground flaxseed with 6 tablespoons of water. Let it sit for 5 minutes to thicken.
  5. Add the vegetable mixture to the bowl with the flaxseed mixture. Stir in the breadcrumbs, nutritional yeast, soy sauce, smoked paprika, cumin, chili powder, salt, black pepper, and fresh parsley.
  6. Grease a loaf pan with olive oil. Transfer the mixture to the loaf pan and press it down firmly.
  7. Bake in the preheated oven for 45-50 minutes, or until the top is golden brown.
  8. Remove from the oven and let it rest for 10 minutes before slicing.
  9. Serve the spicy chickpea and mushroom loaf with your favorite side dishes.
