Ingredients
  • 500 gram Carrots
  • 200 gram Onion
  • 2 cloves Garlic
  • 1 teaspoon Ginger
  • 2 tablespoon Peanut Butter
  • 750 milliliter Vegetable Stock
  • 200 milliliter Coconut Milk
  • 2 tablespoon Lime Juice
  • 1 teaspoon Red Chili Flakes
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 10 gram Cilantro
Instructions
  1. In a large pot, heat some oil and sauté the onion, garlic, and ginger until fragrant.
  2. Add the carrots and cook for a few minutes.
  3. Add the vegetable stock and bring to a boil. Reduce heat and simmer until the carrots are tender.
  4. Using an immersion blender, blend the soup until smooth.
  5. Stir in the peanut butter, coconut milk, lime juice, red chili flakes, salt, and black pepper.
  6. Simmer for another 5 minutes.
  7. Serve hot, garnished with cilantro.
