Ingredients
  • 500 gram Carrots
  • 2 cup Coconut milk
  • 1 medium Onion
  • 2 clove Garlic cloves
  • 1 teaspoon Ginger
  • 1 teaspoon Red chili flakes
  • 4 cup Vegetable broth
  • 2 tablespoon Lime juice
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Cilantro leaves
Instructions
  1. Heat oil in a large pot. Add onions, garlic, and ginger, and cook until softened.
  2. Add carrots and vegetable broth. Bring to a boil, then reduce heat and simmer until carrots are tender.
  3. Using an immersion blender, puree the soup until smooth.
  4. Stir in coconut milk, lime juice, red chili flakes, salt, and black pepper. Simmer for another 5 minutes.
  5. Serve hot, garnished with cilantro leaves.
