Ingredients
  • 1 can Black beans
  • 1 medium Onion
  • 2 clove Garlic cloves
  • 1 medium Red bell pepper
  • 1 medium Jalapeno pepper
  • 1 teaspoon Ground cumin
  • 1 teaspoon Chili powder
  • 1 teaspoon Salt
  • 1 cup Breadcrumbs
  • 1 cup Corn kernels
  • 1 ripe Avocado
  • 1 juice of Lime
  • 2 tablespoon Cilantro
  • 2 tablespoon Olive oil
  • 4 leaf Lettuce leaves
  • 4 slice Tomato slices
Instructions
  1. Drain and rinse the black beans.
  2. In a food processor, combine the black beans, onion, garlic cloves, red bell pepper, jalapeno pepper, ground cumin, chili powder, and salt. Pulse until well combined but still slightly chunky.
  3. Transfer the mixture to a bowl and stir in the breadcrumbs. Let it rest for 5 minutes.
  4. Meanwhile, prepare the corn and avocado salsa. In a separate bowl, combine the corn kernels, diced avocado, lime juice, and chopped cilantro. Set aside.
  5. Divide the black bean mixture into 4 equal portions and shape them into patties.
  6. Heat olive oil in a skillet over medium heat. Cook the patties for about 4-5 minutes on each side, until golden brown and crispy.
  7. To serve, place a lettuce leaf on each plate, followed by a black bean patty and tomato slices. Top with the corn and avocado salsa.
