Ingredients
  • 2 cup Black-eyed Peas
  • 4 cups Vegetable Broth
  • 1 medium Onion
  • 2 clove Garlic
  • 1 medium Red Bell Pepper
  • 2 stalk Celery
  • 2 tablespoon Tomato Paste
  • 1 teaspoon Cayenne Pepper
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 2 tablespoon Olive Oil
  • 2 tablespoon Lime Juice
  • 2 tablespoon Fresh Cilantro
Instructions
  1. Rinse and drain the black-eyed peas.
  2. In a large pot, heat olive oil over medium heat.
  3. Add onion, garlic, red bell pepper, and celery. Sauté until vegetables are tender.
  4. Stir in tomato paste, cayenne pepper, cumin, paprika, salt, and black pepper. Cook for 1 minute.
  5. Add black-eyed peas and vegetable broth. Bring to a boil, then reduce heat and simmer for 30 minutes.
  6. Remove from heat and let it rest for 5 minutes.
  7. Stir in lime juice and fresh cilantro.
  8. Serve hot and enjoy!
