Ingredients
  • 500 gram Potatoes
  • 300 gram Carrots
  • 200 gram Bell peppers
  • 150 gram Onions
  • 3 clove Garlic
  • 400 gram Tomatoes
  • 2 cup Vegetable broth
  • 1 teaspoon Cumin powder
  • 1 teaspoon Coriander powder
  • 1 teaspoon Turmeric powder
  • 1 teaspoon Red chili powder
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 20 gram Fresh cilantro
Instructions
  1. Heat oil in a large pot over medium heat. Add onions and garlic, sauté until golden brown.
  2. Add cumin powder, coriander powder, turmeric powder, red chili powder, salt, and black pepper. Stir well.
  3. Add potatoes, carrots, bell peppers, and tomatoes. Mix everything together.
  4. Pour vegetable broth and bring to a boil. Reduce heat and simmer for 20 minutes.
  5. Add fresh cilantro and let it rest for 10 minutes.
  6. Serve hot with rice or bread.
