Ingredients
  • 1 medium-sized Onion
  • 2 cloves Garlic
  • 2 medium-sized Carrots
  • 1 medium-sized Potato
  • 1 ripe Banana
  • 4 cups Vegetable broth
  • 1 teaspoon Curry powder
  • 1 teaspoon Cumin powder
  • 1 teaspoon Ground turmeric
  • 1 cup Coconut milk
  • 1 tablespoon Lime juice
  • 1 teaspoon Salt
  • to taste Black pepper
  • for garnish Fresh cilantro
Instructions
  1. Heat oil in a large pot over medium heat.
  2. Add onion and garlic, sauté until translucent.
  3. Add carrots, potato, and spices. Cook for 5 minutes.
  4. Add vegetable broth and bring to a boil.
  5. Reduce heat and simmer for 15 minutes, or until vegetables are tender.
  6. In a separate bowl, mash the banana until smooth.
  7. Add mashed banana and coconut milk to the pot. Stir well.
  8. Cook for an additional 5 minutes.
  9. Remove from heat and stir in lime juice.
  10. Season with salt and black pepper to taste.
  11. Serve hot, garnished with fresh cilantro.
