Ingredients
  • 500 gram Cauliflower
  • 1 medium-sized Onion
  • 2 clove Garlic
  • 1 teaspoon Ginger
  • 1 teaspoon Turmeric powder
  • 1 teaspoon Cumin powder
  • 1 teaspoon Coriander powder
  • 1/2 teaspoon Red chili powder
  • 4 cup Vegetable broth
  • 1/2 cup Coconut milk
  • 1 tablespoon Lemon juice
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
  • to taste for garnish Fresh cilantro
Instructions
  1. Heat oil in a large pot over medium heat. Add onion, garlic, and ginger. Sauté until onion turns translucent.
  2. Add cauliflower florets, turmeric powder, cumin powder, coriander powder, and red chili powder. Stir well to coat the cauliflower.
  3. Pour in vegetable broth and bring to a boil. Reduce heat and simmer for 15-20 minutes, or until cauliflower is tender.
  4. Using an immersion blender or regular blender, blend the soup until smooth.
  5. Return the soup to the pot and stir in coconut milk, lemon juice, salt, and black pepper. Simmer for another 5 minutes.
  6. Serve hot, garnished with fresh cilantro.
